Spinach Brunch Waffles
A lazy weekend brunch that all the family will love
RECIPES


Ingredients:
1 shallot, chopped
1 clove of garlic, chopped
Two handfuls of baby spinach
Half a small tub of cream cheese
2 heaped teaspoons of baking powder
420 ml of milk (or plant milk but watch out for emulsifiers and added sugar)
pinch of salt
3 eggs
125g coconut oil, melted
100g rice flour ( wholegrain)
200g plain flour (organic)
Directions:
Sweat some chopped shallots and garlic in a splash of olive oil
Add all of the ingredients except the flours and baking powder to a high speed blender and whizz until smooth
Add the flours and baking powder and pulse to combine
Cook in a waffle maker
Top with cream cheese and organic smoked salmon (or trout) and serve with a big salad.
These savoury waffles are easy to make and are perfect for a lazy weekend brunch. Top with anything you like. Cream cheese and local smoked trout is a favourite in our house.
