Easy Lentil Wraps

Ingredients:

1/2 cup dried red lentils (preferably organic)

1 cup water

Directions:

  1. Soak half a cup of dried red lentils in a cup of water for an hour (half an hour will do if you’re in a hurry).

  2. Rinse the lentils then add them to a blender jug with a fresh cup of cold water.

  3. Whizz until smooth then cook in a hot frying pan. A high speed blender like a Vitamix works best.

    Half a cup of lentils will make three wraps.

These easy lentil wraps are a delicious way to boost your plant intake. Supermarket wraps are usually full of additives so it’s handy to have a quick homemade alternative.
You can use them in lots of ways: dunk them in some smoky bean chilli or a vegetable curry. They’re also robust enough to hold a filling if you want to be more creative.
