Easy Lentil Wraps
Quick and easy, these delicious lentil wraps count towards your plant points

Ingredients:
1/2 cup dried red lentils (preferably organic)
1 cup water
Directions:
Soak half a cup of dried red lentils in a cup of water for an hour (half an hour will do if you’re in a hurry).
Rinse the lentils then add them to a blender jug with a fresh cup of cold water.
Whizz until smooth then cook in a hot frying pan. A high speed blender like a Vitamix works best.
Half a cup of lentils will make three wraps.
