If you are looking for a simple, nutrient-dense dessert that supports energy, gut health and muscle maintenance, this decadent chocolate mousse is a brilliant option. It is rich, creamy and satisfying, while delivering high-quality plant protein and beneficial minerals.

The magic ingredient is silken tofu, which gives a smooth texture and blends beautifully. Do not substitute with firm tofu as it will not create the same consistency.

Ingredients

  • 400g silken tofu

  • 150g organic dark chocolate, ideally 85% cocoa solids

  • 2 tablespoons raw cacao powder

  • 30g tahini (or a smooth nut butter if you prefer)

Method

  1. Break the dark chocolate into pieces and melt gently in a heatproof bowl over a pan of simmering water, or in short bursts in the microwave. Allow it to cool slightly.

  2. Add the silken tofu to a blender or food processor.

  3. Add the melted chocolate, cacao powder and tahini.

  4. Blend until completely smooth and creamy. Scrape down the sides if needed to ensure everything is well mixed.

  5. Spoon into four small bowls or ramekins and chill in the fridge for at least 30 to 60 minutes before serving.

Store in the fridge. It will keep for up to three days.
